Erin Caricofe’s use of fresh, local, and sustainably-raised ingredients is born from her diversified background with food, from fine dining at 211 Clover Lane in Louisville to the test kitchens of Southern Living to harvesting at an agriturismo in Tuscany. After graduating from the Northwest Culinary Academy of Vancouver in British Columbia, Erin embarked on several years of travel, farming, and exploring foodways in as many environments as possible. As a result, her cooking is rooted in culture, personal improvisation, and celebrating farm-fresh ingredients; as an instructor she encourages others to celebrate such quality foods and ingredients, and feel comfortable with their transformation in the home kitchen. Currently, she is cooking in several capacities at the Seelbach Hilton and with local foods caterer Farm to Fork in Louisville, Kentucky.
